For the owners of Ay Caramba, Carlos Aguirre, Sr., and his son Carlos Aguirre, Jr., food and family have always gone together. From day one they have worked with an eye towards providing distinctive Mexican cuisine. The recipes they use have been passed down from generation to generation. At Ay Caramba, they prepare their meat in accordance to long-established methods of Mexican culture. Both Carlos and his son invite you to come in and try two unique dishes only found at Ay Caramba. The parridilla, which is a combination chicken and beef fajitas and pork carnitas served sizzling on a cast iron skillet with baked potatoes, sautéed onions, green and red bell peppers as well as jalapenos, and queso fundido. The second dish is a whole twelve ounce tilapia sautéed with garlic and smothered in a very spicy red sauce.
At Ay Caramba, they pay attention to the fine details of the Mexican cuisine. Their trademark made-to-order corn and flour tortillas are part of the adherence to family style cooking. It is details like these authentic tortilla recipes that are preserved at Ay Caramba, and a tradition they intend to keep alive.
